1 lime juiced and zested
1/8 cup extra-virgin olive oil
1/4 cup fresh black eye peas
1/4 cup cherry tomatoes sliced in half
1/4 cup cilantro sprigs
1/2 medium sized red bell pepper or orange julienned
1/2 avocado sliced
1/4 cup white sweet corn kernels
1/4 cup jicama julienned
1/4 cup red onion julienned
1/4 cup cucumber thinly sliced
1/2 peach or nectarine thinly sliced
1 jalapeño seeded and thinly sliced
Salt and pepper to taste
1. In a large bowl, whisk the lime zest and juice with the olive oil, jalapeños and red onions and season the dressing with salt & pepper.
2. Gently fold in the black eye peas, corn, nectarines or peaches, avocado, orange pepper, cucumbers, jicama and cherry tomatoes.
3. Refrigerate salad for 30 minutes. Serve chilled on a plate or bowl, top with cilantro and drizzle olive oil.
