6 medjool dates
1/2 cup dried cranberries
1/2 cup dried apricots chopped
1/8 cup chocolate Shakeology 
1 Tbsp cacao powder
1/3 cup dried quinoa
1/2 cup raw almonds 
1/2 cup raw pistachios
1 Tbsp flaxseeds
1 Tbsp chia seeds
1 Tbsp hemp seeds
2 Tbsp coconut oil
1 cup 72% cacao chocolate

Optional toppings: crushed nuts, hemp seeds, cranberries, Goji berries, chia seeds or chopped dates.


1. Add dates, cranberries, apricots, Shakeology, cacao powder, quinoa, almonds, pistachios, flaxseed’s, chia seeds, hempseed’s, and coconut oil to your food processor or blender. Pulse blend in your blender or food processor until chunky.

2. Pour mixture onto a sheet pan with parchment paper and start forming 2oz balls with your hands. 

3. Using silicone ice cube molds place 2oz balls into molds and press  into molds to form shape of molds.

4. In a small bowl set over a pot of simmering water, melt the chocolate and stir until smooth. Spoon melted chocolate over energy bar mixture in molds.
