AVOCADO CITRUS CEVICHE WITH PRAWNS

Words can’t even describe all the amazing, delicious, healthy goodness happening here. Fresh, light, creamy with pops of citrus and spiciness topped with prawns and packed with nutrients, vitamins, potassium, healthy fats and protein! It’s perfect for lunch, dinner, side dish or appetizer! It’s also a great healthy dish to make for a party or bbq!
 
RECIPE
INGREDIENTS 

FOR CEVICHE

2 Hass avocados diced
1 ruby red grapefruit
1 orange
1 mango diced
1/4 cup jicama small diced
1/4 cup red onion finely chopped
1/4 cup cilantro chopped or epazote
1/4 tsp garlic minced
2 jalapeños or serrano chilies, chopped and de-seeded
1 lime juiced and 1/2 zested
1 Tbsp extra-virgin olive oil
1/2 tsp cumin 
1/2 tsp coriander
Salt and pepper to taste

PREPARATION 

1. For a grapefruit and orange: Peel the skin from the orange and grapefruit. Then slice grapefruit and orange into 1/4 inch thick rounds. Pull apart rounds to make little wedges of orange and grapefruit.

2. In a small bowl, combine all ingredients and gently toss to combine.
 
3. Season with salt and pepper and set aside while you prepare the prawns
INGREDIENTS 

FOR SAUTÉED PRAWNS

7 ounces of  prawns peeled and de-veined
1 tsp garlic minced
1/2 tsp cumin 
1 1/2 tsp ground Morita chiles 
1 tsp ground coriander
1 Tbsp Extra-virgin olive oil

PREPARATION 

1. In medium-size bowl toss shrimp with 1/2 Tbsp olive oil, garlic, cumin, coriander, Morita chilies, salt and pepper to taste.

2. Heat olive oil in pan over medium to high heat and sautéed prawns for 2 to 3 minutes until done.

3. Spoon ceviche into medium-size bowl,  top with prawns and serve with corn chips, sweet potato chips or chips of choice. ENJOY!
